A review of the six course tasting dinner at this truly five star Sydney hotel

 

The decadent six course tasting dinner $105 or $165 pp with matching wines designed by executive chef Etienne Karner is a must experience in a lifetime.

To start, you munch through the amouse bouche of wafer cones filled with Chilled heirloom tomato water | snow crab & avocado and lead into a creamy rich rare Wagyu beef & Sydney rock oyster tartar Ponzu | fennel | lime 

The Globe artichoke & spring onion fregola Fermented garlic | watercress | Reggiano parmesan was a hit of warm, yielding cheesiness.

Proteins of Pan seared Red Snapper Bottarga | yuzu mousseline | crustacean & chorizo broth and Muscovy duck breast braised endive | daikon | sauce bigarade make excellent use of the respective produce, their accompanying sauces umami-concentrated and heady.

Leading into sweets, the Ruby Grapefruit verrine Yoghurt sorbet, pistachio tasting sharp and cleanly refreshing the palate. Beloved cocoa also makes an entry in the texturally interesting Coconut cloud Chocolate cremeux & cherry sorbet | meringue shards pudding and crunch.

The matching wines are from a mix of family-run, independent vineyards and established labels, all perfectly matched with each dish. With a ground level view of Sydney harbour, the Dining Room is a serene space set away from noise and commotion allowing you to just peacefully ruminate over beautiful food.
