Come one come all! Feasting on some spring lamb.
We made the most of the longer daylight hours by inviting friends over for a lamb lunch. Through online community FeedUp our guests were notified of the details and could RSVP.
For our choice of cut I definitely wanted something that looked impressive and is also a crowd-pleaser. So we went with a rack of lamb because I love the way it just dresses up a table and when carved up becomes individual meaty lollipops.
Not only does it look and taste great with just about anything but it’s so easy to prepare. Rub it all over with some oil, diced garlic, herbs of your choice (mint and rosemary are excellent) then roast in the oven at 200 degrees for 30 minutes (I like mine cooked until medium)
After hardly any work or time at all, you’ll have a gorgeous hunk of caramelised, juicy, tender lamb and a delicious, meaty aroma wafting through your home. Lunch is ready!
After roasting, it’s very important you cover the meat with foil and allow to rest for 5 minutes so it remains ultra juicy.
