kimchi

Marque, Surry Hills

Since I graduated university a few days earlier, something a little fancy was required. Marque offer a Friday lunch for $49 pp and with the booking made, we are ready to sample some of head chef, Mark Best’s creations.

We were really looking forward to Roast Duck, Blood Orange, Hinona Turnip & Shiso and Lemon Curd Icecream, Blueberries & Meringue as advertised on their website. But upon arrival, discovered the menu was completely different. Not that we’re complaining, lunch was still lovely, I’d just suggest they update their website and Facebook.

My amuse bouche of wafer-thin squid ink cracker and taramasalata piped underneath which was tangy and creamy.

Kimchi w/hummus and cracker

Ash’s kimchi was slightly bitter, matching the hummus, humble but served gorgeously.

Purple asparagus w/ prawn anglaise the other w/egg yolk jam

Entree was grilled whole asparagus spears, I had the anglaise with just a hint of prawn and Ash had the rich, egg yolk jam with the consistency of custard which I much preferred.

Housemade butter w/ sourdough and caraway rye

French waiter: Would you like zee sourdough or zee rye?

Me: Can I have both?

French: Of course, zaht iss a very French zing to do.

Both were lovely, the sourdough had a fluffy white interior and a gorgeous crust whereas the rye had a chewier crust perfumed with caraway seeds.

Lamb rump and eggplant

The lamb was cooked perfectly, soft and with a layer of wondrous fat. The eggplant was equally brilliant, smooth and silky, coated with a charred eggplant sauce, carefully adorned with crispy, eggplant shavings.

Dauphine mash $14

We opted for a side of the fluffy mash which was comforting and buttery, going down very well with the tender lamb.

Mango and mustard

Dessert was a bit of a cop out as it was just basically mango and mustard. However, the finely sliced mango cheek was very nice and sweet, while the mustard seeds added a tiny bit of heat.

Our Friday lunch dishes were simple but executed extremely well and was enjoyable overall.
